NICOLE SENIOR'S TIRAMISU

INGREDIENTS​
  • 8 scoops Ensure chocolate powder
  • ¼ cup icing sugar
  • 50ml water
  • 250g mascarpone
  • 125g ricotta
  • 60ml strong coffee (double shot of espresso)
  • 1 nip (30ml) coffee flavoured liqueur
  • 8 Sponge finger biscuits (eg Savioardi)
  • 50g High cocoa content dark chocolate, finely chopped
  • 1 teaspoon cocoa powder (or raw cacao) for dusting

WHAT TO DO
  1. In a bowl, whisk together Ensure powder and sugar to remove lumps. Add water and mix into a smooth paste.
  2. Add mascarpone and ricotta and mix well until combined
  3. In another bowl, break biscuits into small pieces and sprinkle over coffee and liqueur and toss biscuits to coat.
  4. Place half the biscuits in the bottom of 4 serving glasses or jars, sprinkle with half the chopped chocolate and spoon over half the mascarpone mixture. Layer the remaining biscuit pieces and chocolate, and top with remaining mascarpone.
  5. Chill for at least an hour. Serve dusted with cocoa powder
