EMMA'S COCONUT POACHED CHICKEN

INGREDIENTS
  • 4 cups Massel Chicken Stock
  • 1 tbsp Colavita Premium Italian Extra Virgin Olive Oil
  • 1 can of coconut milk, low fat if desired
  • 1 jalapeno, sliced
  • Inch long piece of fresh ginger, sliced
  • 1 shallot, sliced
  • 2 boneless skinless chicken breasts
  • 1 tsp salt and pepper
  • 1 lime, for juice
  • Bok choy, chopped
  • Steamed rice to serve
METHOD
  1. Add the shallot in an oiled pan and cook for 2 minutes, then add in the stock.
  2. Pour in the coconut milk, then add the chicken into the pan, followed by the ginger, jalapeno, and a pinch of salt. Bring to a boil and then simmer for 15-20 minutes.
  3. Add in the bok choy and cook until just wilted. Season with lime, salt, and pepper
  4. Serve with steamed rice and the broth poured over the top.
