JESSICA ALICE'S ONE-POT PASTA

INGREDIENTS
  • 1 tbsp olive oil
  • 1 chopped onion
  • 2 garlic cloves, finely chopped
  • 5 tomatoes- heirloom with stalk
  • 1/2 punnet strawberries unhulled
  • 4 cups Massel Chicken Stock
  • 1/2 tsp oregano
  • 6 nests of La Molisana Tagliatelle All’uovo
  • 1/2 tsp salt
  • 2.5 cups fresh spinach
  • 1/4 cup fresh basil to serve
  • 1/4 cup Parmesan cheese, grated
METHOD
  1. Heat a large saucepan over medium-high heat. Add oil; swirl to coat.
  2. Add onion and garlic to pan; sauté 3 minutes or until onion starts to brown.
  3. Blitz tomatoes and strawberries in nutribullet or food processor to make a fast sugo sauce
  4. Add sugo, stock, oregano, and pasta, to saucepan in that order. Bring to a boil.
  5. Stir to submerge noodles in liquid.
  6. Cover, reduce heat to medium-low, and cook 7 minutes or until pasta is almost done.
  7. Uncover; stir in salt.
  8. Add spinach in batches, stirring until spinach wilts.
  9. Remove from heat; let stand 5 minutes.
  10. Sprinkle with cheese. Serve with fresh basil, or oregano.
