EMMA'S GRILLED OCTOPUS WITH CORIANDER SAUCE

INGREDIENTS​
  • 1 bunch coriander
  • 6 small green chillies
  • 2 garlic cloves
  • a pinch of salt
  • 2 limes, juiced
  • 1 tbsp of Colavita Premium Italian Extra Virgin Olive Oil
  • 1 kilogram of octopus (tenderized – ask your fishmonger if they have any)
WHAT TO DO
  1. Using a food processor (or a mortar and pestle), blitz the coriander, chillies, garlic and salt together with the lime juice and extra virgin olive oil. Blend until combined. If you want a thicker, creamier sauce, add more olive oil.
  2. Season the octopus tentacles with olive oil and salt, then massage the salt into the octopus.
  3. Heat a griddle pan over a medium to high heat. Drizzle some more olive oil over the tentacles, and then fry the tentacles for 3-5 minutes each side, turning once caramelized.
  4. Serve octopus warm with coriander sauce.
