EMMA'S SKILLET SCONES

INGREDIENTS​
  • 1 ¾ cups Caputo plain flour
  • ½ teaspoon salt
  • 2 teaspoons baking powder
  • ½ teaspoon bicarb soda
  • 55g, butter cut into small pieces
  • ¾ cup buttermilk
  • Beechworth Jam
  • Thick dollop cream


WHAT TO DO
  1. Rub butter into flour, salt, baking powder and baking soda.
  2. Add in the butter milk and mix until soft dough just forms.
  3. Heat skillet.
  4. Add one tablespoon butter into skillet.
  5. Cut scone dough into circles, then lay scones into skillet.
  6. Reduce heat to low and cover with a glass lid (preferable). Cook scones for 5 minutes. Flip over with a fork and cook for remaining 5 minutes or so.
  7. Serve with cream and honey to your liking.
  8. Devonshire tea on the road anyone?
