In a large bowl combine the coconut oil and desiccated coconut and mix well using a spatula. Add the condensed milk and mix well. Add the salt and continue mixing until everything is thoroughly combined. Transfer to a lined loaf tin before placing into the fridge while you melt the chocolate.
In a small pot add the cream and chocolate and gently melt until no solids are left and the cream and chocolate are one mix.
Pour the chocolate over the coconut and place into the fridge and allow to set for at least 3 hours before slicing to serve.
