EMMA'S STICKY BEEF RIBS

INGREDIENTS
  • 3L water
  • 1 tbsp salt
  • 4 beef ribs, cut across the ribs with 3 ribs per portion.
  • Barbecue Sauce
  • 1 cup homemade tomato sauce
  • 1 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 4 tsp smoked paprika
  • 1/2 tsp cayenne pepper
  • 1/3 cup single malt whiskey
  • 1/2 cup maple syrup
  • 1/2 onion, finely diced
  • 1/2 cup brown sugar
  • 1 tbsp apple cider vinegar
  • 4 cloves garlic, finely diced
  • 1 orange, for juice and zest
  • 1 The Spice People Whole Ancho Chilli, finely chopped
  • 1/2 cup Colavita Premium Italian Extra Virgin Olive Oil
  • 1 tsp dry mustard powder
  • 1 tbsp sea salt
  • 1 tsp black pepper
METHOD
  1. Bring a large pot of salted water to the boil. Simmer the ribs in the water for 2 hours until soft. Allow the ribs to cool in the water.
  2. Preheat an oven to 180°C.
  3. In a large bowl, combine the barbecue sauce ingredients and stir.
  4. Drain the ribs from the water and place the beef ribs bone side down in a roasting tray. Pour the sauce over the ribs and roast in the oven for 1 hour.
