EMMA'S VEGETARIAN SAUSAGE ROLLS

INGREDIENTS
  • 1 tbsp butter
  • 1/2 red onion, finely chopped
  • 2 cloves of garlic, crushed
  • 2 tsp ginger, crushed
  • 1 tsp turmeric
  • 1 tsp nutmeg
  • 1 tsp cumin
  • 1/2 cup water
  • 200g sweet potato, grated
  • 2 cups baby spinach
  • 1 can chickpeas
  • 80g feta
  • 2 tbsp coriander leaves, chopped
  • 1 tbsp parsley, chopped
  • 1 sheet of Pampas Puff Pastry
  • 1 egg, for egg wash
  • 1 tsp sesame seeds
  • 1 tsp The Spice People Whole Nigella Seeds
METHOD
  1. Preheat a pan over medium heat.
  2. Melt the butter in the pan.
  3. Put the chopped red onion in the pan and sauté until soft and caramelized.
  4. Add in the garlic, ginger, and spices, then gently stir them in.
  5. Add in half of the water and swish it around the pan.
  6. Put the grated sweet potato in the pan, followed by the other half of the water.
  7. While stirring, cook the mixture down until the sweet potato is soft.
  8. Add the baby spinach into the pan, and turn the pan down to low.
  9. Meanwhile, put the chickpeas into a food processor and blitz until they are a rough, coarse, crumble.
  10. Add the chickpea mixture into the pan with a dash of water from the chickpea can, and stir them in.
  11. Turn the heat off and leave the pan to cool.
  12. Once the pan has cooled, add in the feta, coriander, and parsley, and stir it in.
  13. Preheat an oven to 180°C.
  14. Lay out a sheet of puff pastry and cut it in half.
  15. Place the cooled mixture in the middle of the pastry and mould it onto the shape of a skinny log.
  16. Roll up the pastry like a giant sushi roll and use the egg wash as glue to keep it together.
  17. Use a fork to crimp the seam of the pastry.
  18. Repeat with the other half of pastry.
  19. Once both pastries are rolled up, brush the tops with egg wash and sprinkle over the sesame seeds and Nigella seeds.
  20. Cut the pastries into 2 inch pieces and lay them on a lined baking tray.
  21. Place the tray in the oven and bake for 25 minutes.
  22. Once cooked, leave to cool for a few minutes before moving them onto a serving plate.
  23. Best served with tomato chutney.
