LYNTON'S FIGS WITH RICOTTA & LEMON MYRTLE

INGREDIENTS
  • 5 - 6 ripe figs 
  • 1/2 cup fresh ricotta 
  • 3 tsp extra virgin olive oil
  • Pinch salt
  • 2 tbsp honey 
  • 1 tsp lemon myrtle 
  • 1/4 tsp fresh black pepper
WHAT TO DO
  1. Using a small mixing bowl whip the ricotta and extra virgin olive oil for 2-3 minutes using a whisk. Adjust seasoning with a small pinch of salt. Set aside. 
  2. Using a sharp knife slice the figs into quarters, discarding the stem and set aside. 
  3. To one side of the serving plate spoon on the whipped ricotta followed by placing the freshly cut figs next to the ricotta.
  4. Meanwhile bring the honey to the boil in a small saucepan over high heat with the lemon myrtle. Cook the honey for 3-4 minutes until you can smell the honey start to caramelise, allow to cool slightly and pour over the figs and ricotta. 
  5. Serve immediately.
