EMMA'S PASTA WITH BROCCOLI PESTO

INGREDIENTS
  • 600 g broccoli (about 2 heads), grated (including stalk)
  • 3/4 cup pinenuts, toasted
  • 1 garlic clove, crushed
  • 1 tbsp lemon zest
  • 1/4 cup lemon juice
  • 1/4 cup extra virgin olive oil
  • 2 cups parmesan, finely grated 
  • Sea salt & freshly cracked black pepper
  • 500 g San Remo Large Shells
WHAT TO DO
  1. Cook the pasta according to packet instructions.
  2. Whilst pasta is cooking, combine the broccoli, pine nuts, and garlic together in large pan and gently warm through over a medium heat for about 1- 2 minutes until the broccoli just starts to soften.
  3. Remove from heat.
  4. Once the pasta is cooked, transfer into a large bowl and mix in the broccoli, lemon zest, lemon juice, extra virgin olive oil, grated parmesan (reserve a little for serving). Taste and season with salt and pepper.
  5. Serve immediately with a little parmesan sprinkled on top.
     
    Super easy eh?
