Add a drizzle of olive oil and heat the pan over high heat and let come to temperature for 3-4 minutes. Meanwhile in a small mixing bowl add the eggs, cream and a pinch of salt and pepper and thoroughly mix.
Pour the egg mix into the hot pan and working quickly move a spatula through the egg mix scraping the bottom of the pan. Continue this movement until the eggs are 2/3 cooked then using the spatula flatten omelette and remove from heat.
Layer the spinach, Tibaldi Ham and cheese into the centre of the omelette.
Lay the puff pastry out onto a board. Roll the omelette onto the edge of the pastry sheet which is closest to you. Proceed to roll the pastry up with the omelette inside as you would a sausage roll. Seal the edge carefully and trim the ends, brush with egg wash and place onto a line baking tray and bake for 30 minutes or until pastry is golden brown.
