LYNTON'S GRILLED WATERMELON SALAD

INGREDIENTS
  • 500 g watermelon
  • 50 g feta
  • 2 green Adelaide tomatoes
  • 1/2 cup basil leaves
  • 2 bullhorn peppers
  • 1 purple shallot
  • 1/4 cup pistachios, chopped
 
  • 1/2 tsp sea salt
  • 1/2  black pepper, freshly cracked
  • 1 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar 
WHAT TO DO
  1. Preheat a griddle pan over high heat. Cut the watermelon into 2cm wedges and place onto hot griddle pan and cook for 2 minutes until nice grill lines appear on each side. Do not cook for too long as you don't want the watermelon to soften and go "mooshie".
  2. Meanwhile cut the rest of your ingredients and start to arrange on a large serving platter.
  3. Cut the tomatoes into 5mm thick rounds along with the bullhorn peppers. Peel and slice the shallot into paper thin rounds, 2mm thick.
  4. On your large serving platter arrange all your ingredients randomly. Top the salad with pistachios, feta and basil leaves. Season the salad with the salt, pepper, extra virgin olive oil and balsamic vinegar.
  5. Serve immediately.
