LYNTON'S QUINOA FRITTERS

INGREDIENTS
  • 125 g quinoa, cooked
  • 30 g corn flour
  • 1 egg
  • 1 zucchini, grated
  • 1 tbsp tomato chutney
  • Salt & black pepper, to taste

  • 1/2 cup Greek yoghurt
  • 1 tbsp fresh mint, finely chopped
  • 1 tbsp coriander, finely chopped
  • 1/2 tsp The Spice People Cumin Seeds Ground
  • 1 tsp The Spice People Sumac
  • 1 tsp lemon juice
  • Salt & black pepper, to taste
WHAT TO DO
  1. In a large mixing bowl combine all the ingredients until a stiff batter has formed.
  2. Meanwhile preheat a pan over medium-high heat and add vegetable oil and place heaped spoonfuls of the fritter mix into the frypan and gently flatten them into 1cm thick rounds. Cook for 2 - 3 minutes per side or until golden brown.
  3. While the fritters are cooking combine the ingredients for the herbed yoghurt in a small bowl and adjust seasoning if needed.
  4. Serve with a fresh roquette salad.
