EMMA'S BAKED EGG & HAM CUPS
A quick and easy go to snack. Add a salad and you have a great lunch.
Tibaldi Authentic Ham Off The Bone
stems, finely chopped
1 capsicum, finely chopped
1 onion, finely chopped
Salt & freshly ground pepper, to taste
Preheat the oven at 180C.
Line muffin trays with the ham, like you would pastry.
Whisk together the 10 eggs. Season with a little black pepper.
Sprinkle similar amounts of the chopped vegetables in the ham cups and then ladle in the egg mixture.
Top with a little bit of grated cheddar cheese.
Bake at 180C for 20 minutes until puffed and golden.
