LAURA CASSAI'S BURNT BUTTER TORTELLINI
250 g San Remo Cheese Dry Tortellini
100 g butter
1 bunch sage, leaves picked
Sea salt, to taste
Parmigiano cheese, to serve
In a frypan, add the butter and cook until the butter starts to turn golden brown, approximately 5-7 minutes. Half-way through this process, add the sage leaves.
Cook the pasta according to packet directions, then add the pasta to the burnt butter and toss through.
Serve in a bowl with freshly grated Parmigiano cheese.
