LAURA CASSAI'S BOWTIE PASTA WITH TOMATO & BASIL
San Remo No23 Bowties
3 tbsp Concentrato Stir-In Sundried Tomato & Garlic
100 g coloured cherry tomatoes
1 ball soft buffalo mozzarella
1/4 bunch basil, leaves picked
Sea salt & pepper, to taste
Parmigiano cheese, to serve
Bring a pot of salted water to the boil and cook the pasta according to packet directions.
Toss the cooked pasta in a bowl with the concentrato, tomatoes, mozzarella and basil. Season with salt and pepper.
Serve in a bowl and serve with freshly grated parmigiano cheese
