ADAM SWANSON'S VEG PULSE PASTA
1 pkt San Remo 4 Pulses Penne
4 tbsp extra virgin olive oil
6 cloves garlic, smashed
2 cups of sweet potato, peeled, diced into small cubes
1 tsp ground sage
½ cup fresh sage leaves
1 tbsp salt
1 tbsp cracked black pepper
½ cup flat leaf parsley, chopped finely
1 cup greek feta, crumbled
Pre heat oven to 180c.
Place sweet potato, ground sage, sage leaves, olive oil and garlic into baking dish and mix.
Bake for 20mins or until tender.
Remove and add salt & pepper to taste.
Cook pasta as per packet directions.
Strain pasta well and toss together pasta and sweet potato.
Stir through parsley and feta.
Finally check seasoning and serve.
