EMMA'S PORK FRIED NOODLES
450 g Murray Valley Pork Loin, trimmed and cut into very thin strips
1 tbsp light soy sauce
2 tsp caster sugar
2 tsp sesame oil
2 tbsp light soy sauce
2 tbsp dark soy sauce
2 tsp oyster sauce
2 tsp caster (superfine) sugar
2 garlic cloves, finely chopped
80 ml (⅓ cup) chicken stock
1 packet Fantastic Hokkien Noodles
80 ml (⅓ cup) vegetable oil
½ Chinese cabbage (wombok), trimmed and chopped into 3cm chunks
Preheat the oven at 125°C. Spray the tortillas with oil and place in the oven on the griller trays for 60 minutes.
Marinade the pork strips in the soy sauce, caster sugar and sesame oil for about 15-30 minutes.
Remove the noodles from the packet, put in a bowl and cover with boiling water.
Place a wok over a high heat and heat the vegetable oil in the wok. Once the oil is smoking, remove the pork from the marinade and cook until fried and brown.
Add in the light and dark soy sauce, the oyster sauce, caster sugar and the garlic. Toss to combine.
Add in the drained noodles and the wombok, and the chicken stock and toss to combine.
Once the wombok is tender, serve immediately!
