EMMA'S MIDWEEK NOODLES
Ginger, about an inch
1 clove of garlic, grated
2 tbsp soy sauce
3 tbsp rice wine vinegar
3 tbsp sesame oil
1 Chinese cabbage, chopped
1 head of fresh broccoli, chopped into smallish pieces
1 packet of Fantastic Hokkien Fresh Noodles
2 handfuls of snow peas
Handful bean shoots
4 large eggs
Hot chilli sauce, to serve
Remove noodles from the packet and put in a bowl. Cover with boiling water and set aside.
Heat a wok over a high heat, and add a good dash of olive oil. Once hot, add the ginger and garlic.
Deglaze with the rice wine vinegar, soy sauce and sesame oil.
At this point, heat another pan over medium to high heat. Add a dash of olive oil, or butter, and crack your eggs into the pan and fry until done to your liking.
Add the broccoli, cabbage, and toss in the wok.
Then add the snow peas and then the drained noodles.
Add the bean shoots last.
Toss again and then remove from heat and serve into noodle bowls.
Top with a fried egg and hot chilli sauce. Eat!
