LYNTON'S ROASTED BRUSSEL SPROUTS
Extra virgin olive oil
500 g Brussels, trimmed and halved
100 g pork scratching
1 clove garlic, finely chopped
Salt, to taste
Fresh cracked black pepper,
Fresh lemon juice,
Preheat a medium frying pan over medium heat and add 1 tbsp olive oil. Add the brussels sprouts to the pan cut side down, reserving a few for garnish.
Cook until caramelised and charred, 3-4 minutes, add the finely chopped garlic and then place in an oven for a further 3 minutes. Cook until just tender.
Meanwhile in a mortar and pestle roughly grind the pork scratching into a rough powder. Finely chop the left over brussels into a slaw like mixture.
Remove the brussels from the oven, season with lemon, salt, black pepper. place into serving bowl and serve with a scattering of fresh brussels and ground scratchings.
