TRAVIS FOLWELL'S GOURMET PIZZA
5 kg "OO" flour
1/4 cup dry yeast
3 L luke warm water
1 cup of white sugar
1/2 cup cooking salt
100 ml extra virgin olive oil
4 cloves of garlic
100 g gorgonzola cheese
100 g procuittio
2 basil leaves
Add water, yeast, sugar and salt to mixing bowl and stir, then add flour
Start mixer on slow to medium speed until a smooth dough is formed.
Add 50ml of olive oil allow to mix through then stop mixer.
Allow dough to proof between 1-3 hours (depending on temperature)
Cut dough into balls of 200g (for 11 inch bases) and allow to rest for 10mins
Stretch dough onto tray or stone, c
runch garlic cloves and mix with remaining olive oil and spread onto the base.
Using the back of a spoon or fingers spread gorgonzola cheese on the base.
Slice the figs length ways and place on base.
Place sliced prosciutto on top.
Place into a 220 degree oven for 7 mins.
Remove from oven, slice immediately and serve with a garnish with chopped basil leaves.
