EMMA'S FIG & BLUE CHEESE TART
Shadows Of Blue Cheese, from Bills Farm, at the Queen Victoria Market
1 sheet Borg's Puff Pastry
4-5 fresh figs, sliced
1 tbsp honey
1 tsp balsamic vinegar
Salt & pepper, freshly ground
Fresh figs, to garnish
Fresh thyme, to garnish
Preheat the oven to 180C.
Cut a sheet of pastry in two rectangle pieces and place on a baking tray. Score a 1.5cm border around each rectangle to that the edges will puff up easily. Using a fork, prick the centre of the tart.
Arrange the blue cheese and figs in the centre of the pastry.
Combine the honey and the balsamic vinegar together and drizzle over the top of the tart.
Bake in a 180C oven for 20 minutes or until the edges of the tarts are puffed and golden.
Remove from the oven, transfer to a cutting board. Sprinkle with fresh figs and thyme if desired.
Cut into irregular pieces and serve immediately.
