EMMA'S CHARGRILLED CORN
4 corn in the cob (or as many as you like really)
Kewpie Mayo – about ½ cup
Salt and freshly ground pepper
Heat your BBQ, and place the corn, in their cob, directly onto the BBQ flames. Cook the corn, charring the cob so that they are black. Remove from the heat.
In a mortar and pestle, put in some of the charred corn cob and grind to a powder and then add in the mayonnaise to combine.
Peel back the corn cobs, keeping them attached to the corn, so that they can act as a little handle.
Drizzle a little olive oil over the corn - this is Lynton’s idea ;). Season with salt and pepper here as well if you like.
Smear the charred mayo over the corn.
Dust with smoked paprika and generously finely grate parmesan over the top.
This corn is such a favourite at parties!
