LYNTON'S CHOCOLATE PEAR MUFFINS
500 g plain flour
2 eggs, gently whisked
100 ml vegetable oil
100 g unsalted butter, melted
180 ml milk
300 g caster sugar
3 tsp baking powder
1 tsp vanilla paste
1 tsp cinnamon powder
2 pears, cored, peeled and thinly sliced
200 g dark chocolate, roughly chopped
In a small pot over low heat combine the milk, vanilla paste and the butter and gently stir until butter is melted. Set aside.
In a large mixing bowl add the flower, sugar, baking powder and cinnamon powder. Mix the dry ingredients until everything is thoroughly combined, add the chocolate and pear slices.
Make a well in the centre and pour the milk mixture in along with the 2 eggs and fold through with a spatula until a batter is formed. Do not over work the mix as this will make tough muffins.
Divide between muffin tray, how many you get depends on how big your trays are.
Bake in a 160 degree fan forced oven for 25-30 minutes or until a skewer comes out clean when inserted.
