LYNTON'S QUINOA & RADISH SALAD
2 1/2 cups mixed quinoa, rinsed and cooked
2 green apples, finely shredded
150 g mixed radishes, finely sliced
1/4 cup hazelnuts,
1/3 cup parsley leaves,
1/4 cup chives, cut into batons
1 tbsp lemon juice
2 tbsp extra virgin olive oil
2 tsp honey
Salt and pepper, to taste
Cook the quinoa according to packet instructions. I like to rinse my quinoa 3-4 times before using, to remove any grit.
In a small mixing bowl combine the lemon juice, olive oil and honey until emulsified. Season with salt and fresh cracked black pepper to taste.
Once the quinoa is cool combine all the ingredients in a large mixing bowl and dress with a lemon vinaigrette. Reserve some hazelnuts and parsley.
Serve topped with reserved hazelnuts and chopped parsley.
