LYNTON'S ALMOND COOKIES
500 g almond meal
250 g raw sugar
5 egg whites
1 tsp vanilla paste (optional)
Flaked almonds, for decoration
In a large mixing bowl combine the egg whites, almond meal, raw sugar and vanilla paste until completely mixed and a sticky dough has formed.
Roll into strawberry sized balls. Press onto a lined baking tray and top with flaked almonds and bake 160C for 25 mins.
